List activity

https://api.precursor.com.au/api/v1/activity

Returns your provider activity log, newest first, with cursor pagination. Events cover
both portal and API activity: booking actions, availability edits, contact-detail
updates, portal-user management, patient-record access (PHI reads are always logged),
and integration changes.

Actor attribution lives in each event's details text — portal actions end with
"— by [email protected]", API actions with "— via API key "name"". ipAddress is
populated for API actions; portal events may leave it blank.
